2.2 lb (1 kg) of anchovies
4 tbs. of vegetable oil
2 tbs. of dry currants
1 teaspoon of cumin
15 branches of parsley
2 teaspoon of salt
1.5 cuos of rice
3 tbs. of corn flour
2 tbs. of olive oil
1/2 teaspoon of black pepper
Take the bones out of anchovies and wash them wall. Add 2 tsp. of salt and mix it well.
Roast a finely chopped onion in 4 tbs of vegetable oil. Add the grated tomatoes. When it cooks, add the rewashed rice, finely chopped parsley, prewashed currants, salt, black pepper and cumin. Finally add 1,5 cup of hot water and put the lid on. Leave it for cooking. When the rice soaks all the water in, you can tell it is ready.
Choose a deep,glass tray. Oil it with a tbs of olive oil. Dip the anchovies in to the corn flour and tray placing them in to the tray, with their skinned side turned out. Cover all around and bottom of the tray with the anchovies.
Now fill the tray with the rice mix you prepared earlier. Make it flat and cover the top with more anchovies. (don’t forget to dip each one in to the corn flour)
Spread a tbs of olive oil on the top when its done.
Cook in pre-head oven for around 35 minutes, on 360 F (180 C)
