Chargha Biryani
Serves 7-8
Recipe in English:

-Whole chicken 1 & ½ kg
-Dahi (Yogurt) whisked ½ Cup
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Lahori charga masala 4-5 tbs
-Zarda ka rang (Yellow food color) 1/4 tsp (optional)
-Lemon juice 2 tbs
-Cooking oil 2 tbs
-Boiling water as required
-Cooking oil for frying
-Ghee 3-4 tbs
-Zeera (Cumin seeds) ½ tsp
-Laung (Cloves) 2
-Badi elaichi (Black cardamom) 1
-Hari elaichi (Green cardamom) 2
-Darchini (Cinnamon sticks) 2
-Sabit kali mirch (Black peppercorns) 3-4
-Pyaz (Onion) sliced 2-3 large
-Tamatar (Tomatoes) sliced 3 medium
-Adrak lehsan paste (Ginger garlic paste) 1 tsp
-Hari mirch (Green chilli) crushed 1-2 tbs
-Dahi (Yogurt) whisked 1 Cup
-Lahori chargha masala 2 tbs
-Haldee powder (Turmeric power) ½ tsp
-Javatri powder (Mace powder) 1/4 tsp
-Jaifil powder (Nutmeg powder) 1/4 tsp
-Aloo bukhara (Dried plums) 3-4
-Chawal (Rice) 750 g (soaked & boiled with salt & whole spices until 3/4th done)
-Zarda ka rang (Yellow food color) 1/4 tsp or as required
-Podina (Mint leaves) chopped 1-2 tbs
-Hara dhania (Fresh coriander) chopped 1-2 tbs
-Hari mirch (Green chilli) 3-4

-Make cuts on whole chicken & set aside.
-In a bowl add yogurt, ginger garlic paste, lahori charga masala, yellow food color, lemon juice, cooking oil and whisk well.
-Add whole chicken, rub marination evenly and marinate for 3-4 hours in refrigerator.
-In pot add boiling water. Place steam rack and marinated chicken. Cover and steam cook on low flame for 30-35 minutes.
-In a wok heat cooking oil and fry chargha on medium flame from both sides until golden brown.
-In a frying pan add ghee and let it melt.
-Add cumin seeds, cloves, black cardamom, green cardamom, cinnamon sticks, black peppercorns and mix.
-Add onion and fry until golden brown.
-Add tomatoes and mix.
-Add ginger garlic paste, green chilli and mix well.
-Add yogurt and mix well.
-Add lahori chargha masala, turmeric powder, mace powder, nutmeg powder, dried plums, mix well and cook for 2-3 minutes.
-In a pot add prepared gravy, boiled rice, yellow food color, mint leaves, fresh coriander, green chillies, fried chargha. Cover and simmer on low flame for 8-10 minutes.
-Dish out & serve!

Recipe in Urdu:

-Chicken per cuts laga lein & side per rakh dein.
-Bowl mein dahi, adrak lehsan paste, lahori chargha masala, zarda ka rang, lemon juice aur cooking oil daal ker ache tarha mix ker len.
-Sabit murghi par marination ko achay se laga len aur 3-4 hours k liye refrigerator mein marinate ker lein.
-Pot mein boiling water daal ker steam rack rakh dein aur marinated chicken ko dhak kar halki ancch pe 30-35 minutes k liye steam cook ker len.
-Karhai mein cooking oil garam karein aur chargha ko darmiyani ancch per dono sides se golden brown honay tak fry ker len.
-Frying pan mein ghee daal ker melt ker lein.
-Zeera, laung, badi elaichi, hari elaichi, darchini aur sabut kali mirch daal ker mix ker lein.
-Pyaz daal ker golden brown honay tak fry ker lein.
-Tamatar daal ker mix ker lein.
-Adrak lehsan paste aur hari mirch daal ker ache tarha mix ker lein.
-Dahi shamil karein aur ache tarha mix ker lein.
-Lahori chargha masala, haldee powder, javatri powder, jaifil powder aur aloo bukhara daal ker ache tarha mix kar k 2-3 minute tak pakayen.
-Pot mein tayyar gravy aur boiled chawal daal ker phela lein. Zarda ka rang, podina, hara dhania, hari mirch aur fried chargha rakh ker dhak dein. 8-10 minute k liye dum per rakh den or nikal kar serve karein !

  1. Tried this recipe tonight. I hadnt had chargha masala, instead, i used food fusion's chargha masala to marinate the chicken. Turned out delicious! Thank you for the great recipes!
