Kaleji Karhai
Recipe in English:

Ingredients:
-Kaleji (Mutton liver) ½ kg
-Lehsan (Garlic) freshly crushed 1 tbs
-Oil ½ Cup
-Tamatar (Tomatoes) chopped 4-5 medium
-Adrak lehssan paste (Ginger garlic paste) 1 tbs
-Haldee powder (Turmeric powder) ½ tsp
-Lal mirch (Red chili) crushed ½ tbs
-Hari mirch (Green chilies) 3
-Zeera (Cumin seeds) 1 tsp
-Dhania (Coriander seeds) ½ tbs
-Namak (Salt) ½ tsp or to taste
-Qasuri meethi (Dried fenugreek leaves) 1 tsp
-Adrak (Ginger) julienne
-Hari mirch (Green chilies)
-Hara dhania (Fresh coriander)

Directions:
-In mutton liver,add garlic,mix well and leave it for 10 minutes then wash with tap water properly and pat dry.
-In wok,add oil and tomatoes,mix well and cook until tomatoes are soft.
-Add ginger garlic paste,turmeric powder,red chili crushed and mix well.
-Add green chilies and mix well.
-Now add mutton liver and mix well.
-Add cumin seeds and coriander seeds,mix well and cook on high flame for 4-5 minutes until oil separates.
-Add salt and mix well.
-Add dried fenugreek leaves,ginger,green chilies,fresh coriander & serve.

-Hara dhania (Fresh coriander)

Directions:
-Kaleji mein lehsan dal ker ache tarhan mix karein aur 10 minutes kliya chor dein phir pani sa achi tarhan dho ker pat dry ker lein.
-Karhai mein oil aur tamatar dal ker ache tarhan mix karein aur tamatar naram hunay tak paka lein.
-Adrak lehsan paste,haldee powder aur lal mirch crushed dal ker ache tarhan mix ker lein.
-Hari mirchien dal ker mix karein.
-Ab is mein kaleji dal ker ache tarhan mix ker lein.
-Zeera aur dhania dal ker ache tarhan mix karein aur oil alag hunay tak tez ancch per 4-5 minutes kliya paka lein.
-Namak dal ker ache tarhan mix ker lein.
-Qasuri meethi,adark,hari mirch aur hara dhania dal ker serve karein.

  1. Good timing Food Fusion. I needed a refresher on how to make this.

    Whoever cooks it, please pat the kaleji dry well or it spatters a lot when you add it! Unnecessary clean up required afterwards.
