Namak Paray & Nimki
Recipe in English:
Ingredients:
-Maida (All-purpose flour) sifted 3 Cups
-Namak (Salt) ½ tbs or to taste
-Zeera (Cumin seeds) roasted & crushed ½ tbs
-Ghee 4 tbs
-Water 1 Cup or as required
-Ghee melted 2 tbs
-Maida (All-purpose flour) 3 tbs
-Cooking oil for frying
Directions:
Prepare Dough:
-In a bowl,add all-purpose flour,salt,cumin seeds and mix.
-Add ghee and mix until it crumbles.
-Gradually add water and knead until hard dough is formed,cover and let it rest for 30 minutes.
Prepare Nimki:
-In a small bowl,add ghee,all-purpose flour and mix well to make a paste & set aside.
-Grease hands with oil and knead dough again until smooth then divide the dough into 3 equal parts.
-Take one part and make a ball and roll out with the help of rolling pin.
-Add and spread flour & ghee paste and roll the dough then cut into small pieces.
-Take one piece,sprinkle dry flour and roll out with the help of rolling pin then turn on side and press then again fold to make a triangle shape and prick with fork.
-In a wok,heat cooking oil and fry on medium low flame until golden brown.
Prepare Namak Paray:
-Knead dough again until smooth then divide the dough into 3 equal parts.
-Take one part,make a ball and roll out with the help of rolling pin and cut into small diamond shapes with the help of the cutter.
-In a wok,heat cooking oil and fry on medium low flame until golden brown.
-Can be stored in airtight jar for up to 1 week.
Recipe in Urdu:
Ajza:
-Maida (All-purpose flour) sifted 3 Cups
-Namak (Salt) ½ tbs or to taste
-Zeera (Cumin seeds) roasted & crushed ½ tbs
-Ghee 4 tbs
-Water 1 Cup or as required
-Ghee melted 2 tbs
-Maida (All-purpose flour) 3 tbs
-Cooking oil for frying
Directions:

-Bowl mein maida,namak aur zeera dal ker mix karein.
-Ghee dal dein aur crumble hunay tak ache tarhan mix ker lein.
-Thora thora ker ka pani shamil karein ghond ker hard douh tayyar ker lein aur dhak ker 30 minutes kliya rakh dein.
Prepare Nimki:
-Chotay bowl mein ghee aur miada dal dein aur ache tarhan mix ker ka paste tayyar ker lein & side per rakh dein.
-Haathon ko oil sa grease karein aur dough ko smooth hunay tak dubara ghond lein phir dough ko 3 parts mein divide ker lein.
-Ek part lein aur ball bana lein phir rolling pin ki madad sa bail lein.
-Maida & ghee paste dal ker pheela lein aur roll ker ka small pieces mein cut ker lein.
-Ek piece lein aur maida chirak ker rolling pin ki madad sa bail lein phir ek side turn ker ak press ker lein aur dubara fold ker ka triangle shape bana lein aur fork sa prick ker lein.
-Karhai mein cooking oil garam karein aur darmiyani halki ancch per golden brown hunay tak fry ker lein.
Prepare Namak Paray:
-Dough ko smooth hunay tak dubara ghond lein phir dough ko 3 parts mein divide ker lein.
-Ek piece lein aur ball bana lein phir rolling pin ki madad sa bail leun aur small diamond shape mein cutter ki madad sa cut ker lein.
-Karhai mein cooking oil garam karein aur darmiyani halki ancch per golden brown hunay tak fry ker lein.
-1 week tak airtight jar mein store ker saktay han.
